Nutrient-Rich Ingredients

🍋 Lemon Juice: High in vitamin C for immune support and low in calories.

Full Recipe

Ingredients:

• 3 tbsp lemon juice
• 1 tbsp sherry vinegar
• 1 large fennel bulb, cut into 2mm slices
• 2 tbsp olive oil
• 1½ tbsp caraway seeds, crushed and toasted
• 1 tbs maple syrup
• 10g picked dill
• 75g rocket
• 3 medium ripe conference pears, cored and cut into 0.5cm wedges
• 60g pecorino cheese, thinly shaved
• salt and black pepper to taste

Instructions

Prepare

1. Combine the lemon juice and vinegar in a spacious bowl. Incorporate the fennel and let it soften for approximately 45 minutes, occasionally stirring.

Blend

2. In a separate small bowl, mix the oil, caraway, maple syrup, a quarter teaspoon of salt, and black pepper. Strain in the lemon and vinegar mixture from the fennel bowl and blend thoroughly.

Serve

5. Into the fennel bowl, add the dill, rocket, pear, and pecorino. Pour the dressing over the ingredients, lightly toss, and serve.
